To turn off the Auto-Capture when trophies are earned, go into your PlayStation 5 settings via the dashboard, then to ‘Capture and Broadcasts’, in ‘Capture’ scroll down to ‘Auto-Capture' and select ‘Trophies’.
When in ‘Trophies’ you can not only select which trophies you want to capture gameplay for, but you can also select the same for screenshots but also, turn ‘Auto-Capture’ completely off or select the duration of how long you want that captured gameplay to be.
